I am trying to approach this with a reasonable and fair outlook; January is the worst month.

Do you feel like you need some more concrete evidence before you can take my word for it? OK - January is notorious for having the highest number of relationship break ups of the entire year. Bad news or what?

If, like myself, you are currently struggling through the tail end of your New Years Resolutions (“I will go to the gym every day. I promise to only eat food that is green or made from cauliflower”), we have come up with a fresh and healthy lunchtime recipe to help you stick it out. This lunch is so delicious you really won’t miss that boring old sarnie. Plus it is loaded with lovely fruit and veg, so will provide you with vitamins and minerals that your body needs to stay healthy and motivated.

You will be surprised at how filling these little wraps are! Daikon is a type of Japanese radish. It has a mild flavour and lovely crunchy texture, but if you can't get this then raw courgette makes a good substitute. The sharp lime juice really cuts through the sweet hoisin sauce, and makes each wrap a well balanced mouthful.

Makes: approx. 16 wraps (best eaten as fresh as possible)

Ingredients

For the Chicken

  • 200g cooked chicken, shredded
  • 3 tbsp hoisin sauce
  • ½ tsp light soy sauce
  • 2–3 spring onions, finely sliced
  • Juice of half a lime
  • Fresh chilli, chopped (to taste)

For the Wraps

  • 1 daikon radish or large courgette
  • 1 carrot, very finely julienned or grated
  • Handful of beansprouts
  • 16 sprigs of fresh coriander
  • 16 mint leaves, chopped

For the Dipping Sauce

  • Sweet chilli sauce
  • ½ lime, juice and zest

Method

  1. Mix together all the ingredients for the hoisin chicken in a small bowl and set to one side.
  2. Using a vegetable peeler, slice 8 thin, long strips of radish or courgette.
  3. Add chicken, vegetables and herbs to each strip and roll up.
  4. Fold like a mini samosa so they end up in a triangle shape. This stops the filling escaping. For tips on folding a samosa, head here.
  5. If rolling like cannelloni, secure with a toothpick so they survive the lunch box journey.
  6. Mix sweet chilli sauce with lime juice and zest to make the dipping sauce.

And it’s as easy as that! These wraps are incredibly easy to adapt. If you have beef or pork left over, you can use that instead of chicken. Any fresh, crunchy veggies will work too – sugar snap peas and peppers are excellent.

Cheeky short cut alert: this also works brilliantly as a salad if you don’t have time to make the wraps.
